It bears witness to the vibrant community that flourished around it, housing the remarkable testimonial dinner for John McDouall Stuart in 1858. The essence of the Victorian era breathes life into the structure, offering an authentic glimpse into the 1876-1884 boom.

The narrative of this beloved hotel evolved over time, previously known as the Tap Inn and Jungle Restaurant, and today, it stands resplendent from a $7 million revamp, firmly rooting itself back into the heart of the community. As someone profoundly moved by the stunning architecture I've witnessed in Rome and Europe, the resonates deeply with me. I carry a reverence for such architectural feats from my tenure at the renowned South Australian firm, Woods Bagot. This admiration for venue structures and fit-outs earned me the title of an 'aesthete', a badge I wear with pride.
A recent visit to the offered a delightful surprise. As I expressed my admiration for the work of the architect who had masterfully transformed the space, the bartender revealed that the creative genius was none other than his father, Tom Hannah. Pride twinkled in his eyes as he shared the story of the latest renovation, cleverly termed 'Locals Style Fit out' that emerged from the ashes of Covid.
Tom Hannah, an Adelaide native, embarked on his hotelier journey in 1982 with the Gouger Hotel. By 1997, he was breathing new life into the Earl of Leicester Hotel, introducing a concept that artfully blended bar and restaurant menus. His creativity flourished in 1999 with the transformation of the Ovingham Hotel into the Bombay Bicycle Club, a British Raj India-themed venue that reinvented the customer experience.
His innovation journey continued with the creation of the Tap Inn, a tourist icon that garnered accolades as Australia's best hotel redevelopment. Following this, Tom took back the lease and birthed the Jungle Restaurant, a lively jungle-themed venue that hosted countless celebrations.
In the face of the challenges posed by Covid, Tom donned the hat of a project manager and builder, spearheading the redevelopment when the original builder didn't show. His latest renovation, though devoid of an indoor driving range or jungle theme, is punctuated with distinct features like a lolly trolley, bottle shop, and witty signage.
Tom's architectural journey is a shared one. His wife, Lara, is his business partner, having worked together for 15 years before their personal relationship blossomed. Their son, Tom Jnr, is an integral part of this legacy, playing the role of assistant manager at the . This family affair infuses a unique charm into the very foundation of the hotel.
