You may be wondering who on Earth is Matt Burton? Only the die hard caffeine trivia buffs out there will know that Matt was not only awarded Barista of the year by the Courier Mail in 2008 and 2009, but his cafe 'Two Cups' in the city was also awarded the 'Best Cafe' title. The judges didn't hesitate to call Matt, 'the Rembrandt of baristas' and they went on to say that the boys at Two Cups had the 'ability to turn coffee into something special'. (The Courier Mail, March 11, 2008).

Fast forward four years and Matt has moved on from his fast paced city life, and is now a family man living in the suburbs. This hasn't dampened his passion for good coffee or his ability to create a very special cafe experience.



Jimbo and Co. Coffee House is Matt's latest creation. Tucked away in the back of a little shopping centre in Wynnum West, where you would least expect to find it, is this eclectic little cafe complete with its mix of quirky furniture, amusing signs and damn good coffee.

On the day we visited we were served by barista Bee and the coffee was spot on - perfect extraction, perfect temperature, and served in the mug that she knows is my favourite. This barista is super fast as well, so don't hesitate to drop in if you only have a minute to grab a quick cuppa on your way to work.



Also on the menu they have bacon and egg muffins, cheese and ham toasties, super cute cookie monster cakes, chunky fruit and nut toast and 'the best banana bread in the world'.
Jimbo's is presently open every day of the week, but don't leave your run too late, as they close at 12 noon. Matt says this is because mornings are the time that we like to drink good coffee, read the paper and eat banana bread.



If you're a person who likes to sleep in then head out for a leisurely breakfast or lunch though, don't panic. This quirky little cafe is taking over the shop next door and evolving into 'Big Jimbos'. Modelled on a traditional coffee house and all day breakfast cafe, Jimbos will continue with the fabulous coffee and friendly service, but add to this old fashioned milk shakes and spiders, bacon and egg brekkies and home style hamburgers. Most exciting to all Jimbo's customers is the fact that when the extension opens at the end of January, the hours will be extended to 4pm each day. The regulars are looking forward to long lunches, afternoon tea with friends, and dropping in with the kids for an after school treat.



It's always fun to have an adventure searching out great coffee on the weekend, so why not make a trip out to Wynnum West to rediscover the work of Matt Burton, the Rembrandt of baristas?
