I've always struggled to know what to do with rice apart from the old vegetable stir-fry which seems to make a regular appearance on our dinner table. Last weeks culinary challenge was to get creative and make a recipe I hadn't yet made with rice. I found the recipe for Jamaican Rice, made a few alterations, and was pleasantly surprised by the result. It was quick, simple and tasty. Here's how it's done:
250g firm tofu 2 tbsp thyme (fresh or dried) 2 tbsp olive oil 1 sliced brown onion 1 crushed garlic clove 1 small red chilli
400ml of vegetable stock 200g basmati rice 4tbsp coconut cream
400g canned red kidney beans, drained
salt and pepper
Some of the ingredients could be sitting at the back of the pantry.
1) Cut the tofu into bite-sized cubes . Toss with half the chopped thyme. Sprinkle with salt and pepper to taste.
2) Heat 1tbsp of oil in a frying pan and fry the tofu stirring occasionally. Remove and keep warm.
Well I tried this. I used soy beans instead of red kidney as that is what I had in the pantry. I used extra chilli and garlic because i LOVE chilli and garlic. It was very easy and VERY tasty. Thank you. I have been telling all my vego friends about it :-)
