I've always struggled to know what to do with rice apart from the old vegetable stir-fry which seems to make a regular appearance on our dinner table. Last weeks culinary challenge was to get creative and make a recipe I hadn't yet made with rice. I found the recipe for Jamaican Rice, made a few alterations, and was pleasantly surprised by the result. It was quick, simple and tasty. Here's how it's done:

Ingredients:

250g firm tofu
2 tbsp thyme (fresh or dried)
2 tbsp olive oil
1 sliced brown onion
1 crushed garlic clove
1 small red chilli
400ml of vegetable stock
200g basmati rice
4tbsp coconut cream
400g canned red kidney beans, drained
salt and pepper



Recipe:

1) Cut the tofu into bite-sized cubes . Toss with half the chopped thyme. Sprinkle with salt and pepper to taste.

2) Heat 1tbsp of oil in a frying pan and fry the tofu stirring occasionally. Remove and keep warm.



3) Fry the onion in the remaining oil, stirring for 3-4 minutes.

4) Stir in the garlic, chilli and remaining thyme. Add the stock and bring to the boil.

5) Stir in the rice then reduce the heat and simmer for 12-15 minutes until the rice is tender. You may need to stir occasionally to stop the rice from sticking.



6) Stir in the coconut cream and red kidney beans. Cook gently for 2-3 minutes.

7) Spoon the tofu over the rice and serve hot.
