Artisan Ice-cream @ Helados Jauja's in Carlton

I am pretty sure I don't have to mention the phrase "ice-cream appreciation" twice. With this hot weather I have your attention.

Actually any day is a good day for ice-cream, no matter what the weather, and these ice-cream appreciation classes at Helados Jauja in Lygon Street Carlton are held every six weeks or so throughout the year.

As the queues coming out the door attest to Heladas Jauja is no ordinary ice-cream shop. In fact the word 'Jauja' in Argentina means roughly 'absolute indulgence'.

Lucy and Pepe and Po-Lin have have brought the craft of superb ice-cream making with them from South American via a holiday that turned into a business venture once they tasted the ice-cream there.

They use quality ingredients and lots of thought goes into melding seasonal produce into their creamy stream of cold deliciousness.

This artisan ice-cream has not artificial flavouring, no fake colouring and no premixed ingredients.

Their masterclass is for dedicated ice-cream lovers of all ages and includes a tasting of all 24 flavours in their range. They call it degustation but I am sure others have other words for such pure indulgence.

You will get to try the inventive such as apple crumble with real apples cinnamon and sugar, rosewater & pistachio, salted chocolate & peanut raspberry with chocolate, black sesame and cocoa decadence that includes 80% cocoa extracts.

With each tasting you will also get to explore each ice-creams individual profile.

Then there is the outright outrageous but surprisingly delicious delights such as Szechuan pepper with whole peppercorns, goats cheese with cranberries and roasted walnuts and salted caramel.

They also make some classic sorbets such as coconut, apricot and white peach sorbet.

As well as your myriad of tastings, you will learn what goes into great ice-cream and perhaps get some ideas to try at home. Participants also get to take away a tub of ice-cream (consisting of three of their favourite flavours) to share with their family or friends.

Tip: If you conveniently forget to bring an insulated bag, it might start melting on the way home so you may just have to eat the whole lot yourself.

Ice-cream tastings, almost as good as chocolate tastings. All joking aside thought, it looks fantastic. Lygon Street has always been a hub for amazing food.
