Middle Eastern Dip
Hailing from the Middle East, Hummus is my favourite dish to have, no matter what time of the day. It's a tasty dip that can be served with pita, bread, carrots - anything. And the best part is that it's so easy to make.
Here's the recipe I use whenever I have a craving for authentic Hummus. It's so much healthier and more delicious than what the supermarkets sell.
2 large cloves of garlic (alternatively, use 1/2 tsp garlic paste) 2 tbsp Tahini Paste (or add some sesame seeds and olive oil) 2 tbsp Olive Oil 4-5 tbsp fresh lemon juice (or till you think the taste is alright) 1/2 tbsp Cumin powder Paprika, salt and pepper to taste
METHOD Drain the chickpeas and place them in a food processor; keeping 1/2 a teaspoon of the preserved liquid.
Add the other ingredients (except the paprika, salt and pepper) and blend till you get a smooth paste with less/no chunks.
Top it off with paprika and some salt and pepper sprinkled over the hummus and serve with warm pita bread.
And the whole procedure takes a good 5 minutes - that's all there is to it!
