With people stockpiling and some supermarkets profiteering, it is amazing how expensive some of our basics have become. I've heard of potatoes selling for as much as $12 a kilo.

I cook a lot with mince, whether it is homemade burgers or my famous meatballs, it is a staple in a lot of homes. I felt a sense of horror when I went to purchase some mince for cottage pie and it was $19.99 a kilo. In fact, the steak was cheaper. Like many homes, I use mince to make in-expensive meals. I scanned the shelf to see lovely lean diced beef at $15.99 and I thought I'll make my own.

As I was going to get the mincer out, I scanned the shelves further to find a de-boned pork shoulder roast for $7.99 a kilo. Bingo my mince will be a much better quality than the mince on the shelf, as you can guarantee it was not made with quality meat.

Mince is very easy to make. You literally dice the meat and remove any unwanted fat. Some fat is actually good, as it can help bind the meat in your recipes.

I used an electric mixer attachment for my mince, however, they are not that expensive to buy either a hand mincer or small electric one. Catch had a great deal for $44 on a simple electric one. I did notice that Peter's of Kensignton have sold out of a lot of their mincers. If you get stuck, check your Mum's or Grandma's kitchen cupboards, as you never know your luck.

I normally do a large batch at once when I get meats on sale and then freeze in snap lock bags.

Now I've got all this lovely mince, I started to think of budget-friendly meals I could make. How many others can you think of?

  • Meatballs
  • Bolognese Sauce
  • Lasanga
  • Meatloaf
  • Middle Eastern Lamb Pizza
  • Tacos
  • Nachos
  • Burgers
  • Koftas
  • Thai Larb
  • Chilli Con Carne
  • Shepherds and Cottage Pie
  • San Choy Bau
  • Meat Pies

  • Don't forget, you can also extend your mince using breadcrumbs or lentils and it is a great way to hide vegetables from the kids.
