A cosy warm slice to enjoy with a cuppa
Sometimes we all need comfort food to cheer us up and make us feel all warm and cosy. This recipe combines the flavours of honey, dates and walnuts in a dense cake, which is best served warm for maximum comfort food results. The dates are soft and gooey, the honey flavour is intensified and the walnuts have a soft, warm crunch.

Eat warm, while the dates are hot and gooey!


Ingredients

125g margarine
1/2 cup honey
1/4 cup raw sugar
2 Tablespoons milk
1 and 1/2 cups pitted dates, chopped
1/4 teaspoon baking soda
2 cups plain flour
1/2 teaspoon nutmeg
1 cup walnuts, chopped
2 eggs, lightly beaten




What To Do

Step 1: In a small saucepan, add the margarine, honey, sugar and milk. Heat on low until the margarine has melted and the sugar has dissolved. Remove from heat and add the dates and baking soda. Allow to cool.

Step 2:
Preheat oven to 180 degrees (fan-forced) and line a rectangle slice tray with baking paper.

Step 3: In a large bowl, add the flour and walnuts. Make a well in the centre and then add the margarine mixture and eggs. Stir to combine.

Step 4: Pour into the slice pan and bake for 25 minutes, or until cooked through. Remove from oven and slice into squares. Serve warm.
