The Freshest Oysters you can get out of the Water
On a recent weekend away with my family, we stumbled upon
Holberts Oyster Farm in Port Stephens.
This was an 'accidental' discovery, but was indeed one of the highlights of our trip as it resulted in a long afternoon indulging in sweet Australian prawns and freshly shucked oysters.
At Holberts Oyster Farm, you can watch the professional oyster shuckers at work through large windows from the customer area, then purchase a selection of prawns and oysters to enjoy on the lawns overlooking Cromarty Bay.
Just Sit Back and Enjoy the View
On a quiet day, you should be able to settle in at one of the wooden tables and benches to enjoy your prawn and oyster spread, otherwise grab a picnic basket and just enjoy the view.
We were very lucky during our visit to see a pod of dolphins swimming playfully just off the shore - the kids absolutely loved watching the dolphins arch in and out of the water.
If you look very closely, you'll also be able to see the oyster farm off in the distance.
Heaven for Oyster Lovers
Freshly shucked Pacific or Sydney Rock oysters can be bought by the dozen, natural or kilpatrick style. You can also buy un-shucked oysters and large cooked Australian prawns with various sauces for the perfect accompaniment.
That's about all that you can buy at Holberts Oyster Farm, so if you want anything else to go with your prawns and oysters (such as some crusty bread, maybe a nice wine, or a little salad) you'll need to bring it with you (there are no other shops or facilities around Holberts Oyster Farm).

Holberts Oyster Farm is a family-owned business and has been operating over five generations. They are a key commercial supplier to local restaurants and seafood outlets around the Port Stephens area and throughout NSW, and is also one of the biggest processors of oysters in NSW.
Holberts Oyster Farm is also one of the few places where you can take a group tour through the oyster farm and experience the entire process of growing and processing oysters. Group tours need to be pre-arranged.
