What a wonderful way to spend a relaxing Sunday afternoon sipping tea and indulging in a selection of assorted savouries and sweets. So that's exactly what we did!
Hightea at Highfield Estate
Booked High Tea at Highfield Estate for myself and partner for our weekend getaway! Highfield Estate is located at the foothills of the Macedon Ranges and just an hour drive out of Melbourne so it makes for a perfect day trip! Take the New Gisborne exit 708C and head straight down Barringo Road.
The Estate has a function room dedicated for Weddings & Functions, surrounded by beautiful rose gardens and a lake. The High Tea is located across the brick path from Highfield Receptions in the Gallery with its mud brick walls and exposed beams. It is the perfect rustic country setting for experiencing High Tea.
Our host Rebecca Moore, founder of Tea of Earth is a passionate Tea blender and specialist on all things tea related. With her warm and bubbly personality, she welcomed us with a complimentary glass of champagne or if you prefer something non-alcoholic. We were treated to a glass of chai sparkle cocktail. This delicious drink is made up of Rebecca's special chai extract which you can purchase in her little tea popup. The set up is cute, colourful and intimate. Tables are set up with a collection of vintage tea sets and gorgeous colourful teapots, which Rebecca tells me she has had a fascination for since she was a child! This truly brought me back to my youth, playing with toy tea sets in a make shift cubby house, under my parents dining table!
Our first tea pairing was with White Coconut Berry Illusion tea and delicious creamy Chicken and Snowpea finger sandwiches. A subtle white tea full of antioxidants. Rebecca provided us with a brief introduction on white tea and its health benefits and properties. White tea is known to be one of the most delicate tea varieties because it is so minimally processed and only the young buds are harvested before the tea plant's leaves open.
Each course was carefully paired with the appropriate tea tasting. The Salmon & Avocado palate cleanser and the Gingerbread Healing Tea, a Rooibos tea paired so well with the savoury dishes. It's an organic tea and contains no caffeine. Loved the ginger, clove and vanilla flavour profiles that Rebecca had carefully hand blended. All perfectly balanced!
My eyes widened as the desserts come out! Beautifully presented on a vintage tiered cake stand, along with a pot of Egyptian Hibiscus herbal tea to cleanse the palate. If you are looking for High Tea with a difference and want to learn about tea in a gorgeous setting then this is it! Rebecca's tea passion is everywhere. She also draws a raffle to win a Tea of Earth Hamper and offers one tea reading per table. I nominated my partner who was happy with his positive tea reading!

A little tea pop up stand is beautifully set up where you can purchase from a range of Tea of Earth products. From carefully blended regional organic teas such as the Hanging Rock Breakfast tea to Matcha Powder and Tea extracts. I had to stock up my pantry with the White Coconut Berry Illusion, The Gingerbread Healing Tea and of course the Chai Spice tea extract
You too can experience High Tea with a difference at Highfield Estate in New Gisborne. Perfect day out with the girls, bring your mother in law or a romantic setting for two.

Well done to Rebecca owner of TEA of Earth, I attended High Tea at Highfield Estate with 12 other people, it was fantastic, done a great job of accommodating a large group.... The tea blends are so good.. The food was awesome and well match with the tea's! On arrival we had a chai champagne waiting for us...it was very well priced.
Rebecca makes her own oraganic chai extract that I couldn't leave without buying one to take home.
"Well done Tea of Earth" will go back again!
