Hecho En Mexico along Prospect Road in Prospect is one of a chain of restaurants in Australia that specialises in Mexican cuisine. The dishes offered range from those suitable for a single diner to bigger dishes ideal for sharing.

Served on a hot plate, the rice of the Spanish Paella was light and fluffy, and had a delectable spiced flavour. The prawns that we chose for the chorizo and prawn option were cooked just right. Chorizo added a hint of smokiness and the carrots, mushrooms and capsicum added extra texture. Take care when eating this dish as it is served steaming hot. Leaving the rice on the hot plate as you eat is advised so it can develop a bit of a crust.

The pieces of chicken that we chose for their Fajitas were juicy and of a good size. The tomato salsa & Tajin seasoning gave the dish a tangy flavour and slices of capsicum added some sweetness. Like the Paella, the chicken was served steaming hot.

Served with the dish are Mexican rice, corn tortillas, frijoles charros, pico de gallo, chipotle aioli and mint cream. Frijoles charros is a Mexican bean dish similar to baked beans and pico de gallo is a variety of tomato salsa. We liked that the beans in the frijoles charros still retained some texture. The corn tortillas can be eaten with the chicken in a similar way to a taco.

Most of their Tacos can be ordered as a single serving or as a set of three. Diners are not restricted to a single variety and can have three different ones. The hand-pressed corn tortilla base was light and fluffy and was big enough to make the Taco a satisfying meal.

During our visits, we tried four varieties - Fried Fish, Pork, Beef and Chorizo. The hoki in the Fried Fish Taco was cooked just right and the batter coating contrasted nicely with the flesh. It was partnered nicely by green papaya and carrot slaw and a hint of spiciness was provided by garlic jalapeno aioli. It may not look like it at first but there was enough chorizo in the Chorizo Taco to make eating it satisfying. Potatoes provided a change of texture and the smoky flavour of the chorizo was enhanced by chipotle aioli. Corn salsa balanced out the smoky taste of the dish.

The braised beef in the Beef Taco was juicy with a delectable savoury taste. Slightly sweet mango corn salsa was a good foil to the beef, and the Mexican slaw had a nice crunch. Salsa verde completed the dish. Compared to the Beef Taco, the flavour of the Pork Taco was slightly sweeter from the orange in the marinate. The pineapple retained some bite and was not overly sweet. For those concerned about the flavour of the ricotta cheese, it was not too strong. All their tacos come with corn chips and a lemon wedge.

While we thought the portion size of the Habanero Chicken Wings could have been a bit bigger, the flesh was succulent and was contrasted nicely by the crisp exterior. The chipotle and barbeque sauce they were tossed in gave them a smoky flavour that had a hint of heat. For those who want to add more flavour, they can squeeze the lemon wedge over the wings.

The beer-battered chips in the Mexi Mexi Chips were fluffy and cooked sufficiently to make the exterior crispy. The Mexican herb and oregano seasoning gave them a spiced taste that was very moreish. Served with the chips is your choice of a garlic aioli or chipotle aioli dipping sauce. Diners can have both at an additional cost.

Aside from the usual soft drinks, diners can choose from a wide variety of Mexican non-alcoholic and alcoholic beverages. Our choice was a lime-flavoured soft drink from the Mexican brand, Jarritos. The restaurant had a modern feel with diners having the choice of indoor or outdoor seating.
