Healthy Walnut & Choc Chip Cookie Recipe

An egg-less, flour-less recipe to try this weekend
If you are trying to change your diet or remove flour from the foods that you eat, then check out this egg-free, flour-free recipe below - which tastes so good, you won't even know anything is missing! For best results you need a food processor and then it is just 10 easy steps to make this tasty treat, without any guilt (well...not much anyway!) Let's get started...

A tasty combination of nuts, coconut and chocolate!


What You Need:

8 dried dates
1 and 1/2 cups walnuts
1/2 cup unsalted cashews
1 teaspoon baking soda
1/3 cup olive oil
1 teaspoon vanilla essence
3/4 cup desiccated coconut
1/2 cup Nestle Choc Bits (plus 1/3 cup for icing)




What To Do:

Step 1: Preheat the oven to 180 degrees, fan-forced.

Step 2: Place dates in the food processor and blitz for 30 seconds until completely chopped.

Step 3: Add walnuts and cashews and blitz until they are finely chopped. Add the baking soda and blitz again.

Step 4: Add the olive oil and vanilla and blitz again until a thick mixture forms.

Step 5:
Pour in the coconut and blitz until combined, stopping to scrape the mixture down the sides if needed.

Step 6: Remove the blade and stir the Choc Bits in with a spoon.

Combine all the ingredients to make the cookie batter

Form into biscuit shapes and bake until browned on the edges


Step 7: Line a baking tray with baking paper and scoop out a small handful of mixture and mould with your hands into a flattened cookie shape. Place on baking tray and repeat. This recipe makes approximately 12.

Step 8: Bake for 10 - 15 minutes until browned around the edges. Allow to completely cool.

Step 9: To make the chocolate icing, place 1/3 cup of Choc Bits in a microwave-safe bowl and heat at 30-second intervals, stirring, until completely smooth. Use a tablespoon to smear large circles on the top of each cookie.

Step 10: Place cookies in a sealed container in the fridge to harden both the cookies and icing. After a few hours, remove and enjoy!

Smear on the icing and then place in the fridge to harden (plus they taste even better cold!)
