Tasty, nutritious and simple. The base used here is a half slice of turkish bread lightly toasted. (about 10 seconds in the toaster). Panini or similar works just as well. This piece is all about colour and taste. Where there are lots of bright vibrant colours in any recipe, usually this equates to healthy and delicious.

Layered directly on top of the turkish bread is a small amount of crumbed feta cheese. (any variety is fine).
Next are some mushroom slices, lightly baked (or you can do a quick light fry with minimal oil in a pan).
Top with fresh tomato slices.
Sprinkle a few more crumbs of feta cheese, (alternatively a couple of teaspoons of plain cottage cheese).
A few roasted pinenuts and sunflower seed mix have been added.
Add fresh herbs (coriander has been used in this recipe). Any herbs like parsley, finely chopped chives or spring onions also work well.

Salt and pepper to taste if desired.

This simple snack can actually be made as large as you want by using large lengths of turkish bread (these would need to be toasted in the oven). You could then add a few extras to make a nice meal. Roasted pumpkin slices add gorgeous taste, and can be roasted with honey or maple syrup, as an alternative to just on their own. For a crunchy and fresh tasting topping add some finely sliced snow peas.
