The is no doubt that Australians love the taste of deep-fried calamari, a dish best left to restaurants with large exhaust fans. The calamari fritti or fried calamari with spiced mayonnaise is commonly founded on the menus of Italian restaurants. Instead of the onion ring look of breaded circles, Merchant chose to prepare them as fried sticks which made it easier for handling with fingers. The calamari was still tender and not chewy or tough to the bite.
