Gnochi al gorgonzola or Gnocchi with gorgonzola and walnuts is one of the most popular gnocchi dishes I've found when traveling in Italy. Gorgonzola, which is basically Italian blue cheese used since the 8th century, adds a soft yellow and creamy flavour to the gnocchi. This dish in Italy is saucier but I much prefer the version at Merchant where an adequate amount of gorgonzola is added to coat the morsels of gnocchi in rich yellow creaminess without being overpowering.
