Clams are so plentiful in Venice that they have become the inspiration and star of a pasta dish. The Venetian Spaghetti co le caparele or Spaghetti with clams has now become a classic Italian dish. Merchant makes a delightful version of large morsels of the fresh molluscs and spaghetti coated with a light and seafood sweet sauce derived from the herbs, tomatoes, olive oil and clams. It would have been tastier if the juices from the clams could somehow be absorbed into the pasta. I might have a way to do that in my kitchen.
