Grilled Eggplant Salad Recipe

I work in the Finance department of a media company, and someone who dabbles in writing of any genre.

I so love this dish. Very easy to make, so delicious and healthy as well.

Ingredients
3 x eggplant (or 2)
3 x small tomatoes
1 x small onion
a pinch of salt to taste
a pinch of black pepper to taste
1 x small red chilli
half of a lemon
a dash of soy sauce

Grill the eggplant until the skin turns brown; this will make it much easier to peel the skin off.

Put it aside

In a big bowl, mix tomatoes, sliced onions and chilli (remove the seeds if you don't want the dish to be too hot).

Sprinkle some black pepper and add a bit of salt.

Cut the lemon in half and squeeze the juice into the bowl with the ingredients.

Place the peeled eggplant.

Mix it all together and voilà - a nice compliment for a barby in the backyard.

I know this sounds a bit salty and therefore not be that healthy, but hey, everything is moderation! So you just need to taste it as you add each ingredients.

Cook it, mix it and enjoy!
