Quick Green Chicken Curry with Jasmine Rice Recipe

Yummy and Easy
Chicken breasts or thighs – to slice into strips
Broccoli – 1 whole
Carrot – 1 or 2
Asia Specialties' Mild Green Curry (Available from Woolworths or Aldi stores)
Imperial Grain Jasmine Rice (available from Aldi stores)

Cut up/slice the chicken up and add it to heated oil on the stove top – I cook mine at a medium heat until chicken stops being pink in colour and goes all white
Put the rice in a rice cooker (see, told you it was a quick recipe) – 1 cup of rice is to 3 cups of water – 1 cup of rice generally does 2 adults
Wash the broccoli and carrot/s, cut up the broccoli into little trees and slice the carrot/s – put them aside until later

Keep an eye on the chicken – flip/stir when necessary, and turn heat up to high when you feel comfortable doing so (I cook on instinct)
• The rice cooker cooks the rice by itself, the 'cooking' light goes off and the 'warming' light comes on when the rice is ready – just leave it in the pot until everything else is ready
• When the chicken starts going brown, add the entire bottle of green curry, the broccoli and the carrot pieces – stir it all together (at this point you can put a lid on the chicken curry mix if you'd like to, but most of the time I just let it cook as is because I like my meals saucy)
• Stir the chicken curry mix regularly until the sauce covers it all – it should take about 10 to 15 minutes for it all to be cooked nicely and the sauce to have thickened

• Serve the rice into two bowls and add the chicken/vegetable curry mix over the top
• Voila – it is done
