Want to feel good about yourself? Want to feel really good about yourself - like you're a super organised smarty pants? Well, make this / these lentil(s) recipes. Healthy, cheap and easy, they'll feature forever on your 'She /He's lookin at ya' wish list!
Lentils aren't just about hippies, Hari Chrishnas and 'Gopples'. The main recipe's a Greek classic. So think Greek Gods and Goddesses, aquamarine seas and skies (not riots or economic strife - though the recipe can help in these areas too: energy and cost wise).
Here's the recipe: It's called Fukyes soup (I swear!).
1 packet dried lentils (green or brown) 1 bay leaf 1litre water 1 large onion (finely or roughly chopped) 3 cloves garlic (finely or roughly chopped) 1 large carrot (grated or chopped) 1 tblspn tomato paste (or 3 fresh tomatoes mix-mastered [ie pureed or fork mashed] or 1 can crushed tomatoes
1 tablespoon balsamic vinegar or any vinegar (at the end)
1 tablespoon olive oil (at the end)
1 teaspoon oregano.
Put everything in a pot with the 1litre (or so), cold water and boil for an hour. Then add olive oil, vinegar, oregano and salt, and Kali Orexi (Bon appétit).
Makes about 6-8 serves (so you can freeze what you don't use).
Now, to vary or 'stretch' this recipe, add cooked basmati rice and curry powder - and fresh coriander instead of oregano (Indian style). Or yoghurt and chilli flakes/powder (Middle Eastern style). Or, add chopped potato to the recipe while cooking.
