Fried chicken – KFC style
Ingredients:
- 2 crushed onions
- Salt, pepper and chilli
- Mustard
- Flour
- Bread crumbs
- Oil (frying oil of course)
- A clear plastic bag
Rinse the chicken with water and then cut the chicken into four halves.
Add the salt, pepper, chilli and mustard to the crushed onions. Mix them together and then marinate the chicken halves with the blend. Leave it for 2 hours (you can also poke the chicken with your knife, just small pokes for better zing taste and faster frying).
Fill the plastic bag with 2 cups of flour and 2 tsp of bread crumbs (you could also add a small amount of corn flex for a crunchier taste – it's optional). Put the chicken halves in the bag and shake well till you can see that the chicken is fully covered with flour.
Preheat oil on the stove and then place the chicken and cover it (you must make sure that the oil covers the chicken). Leave it for 20 to 45 minutes and here you have your homemade KFC fried chicken and it's best when served with chips and onion rings.
Chicken stuffed with cinnamon rice – Acapulco style
Ingredients:
- 6 tbsp of white rice
- 4 tsp of Cinnamon
- Salt and pepper
- Olive oil
- 1 crushed onion
- ½ cup of water
After washing the chicken well, dab it with a pinchof salt and pepper from inside out.
Preheat olive oil and add the crushed onion. Stir until it turns golded brown, then add the rice, 4 tsp of cinnamon, salt and pepper stir for about 1 minute then add ½ cup of water. Leave it on the stove for about 15 minutes; you'll realise the rice is turning brown and half done. Take it off the stove and leave it to cool down.
Stuff the cinnamon rice inside the chicken and you can place the left-over rice all around the chicken.
Place it in the oven under 200 degrees C and leave it from an hour to an hour and half. You can add some little water if it seems drying out.
Of course when you see the top of the chicken getting reddish, it means it's done and ready for your dish with cucumber yoghurt salad on the side.
Chicken with tomato sauce and lemon – Hawaii style
Ingredients:
- 5-6 Tomatoes or 5 tbsp of tomato paste
- ½ cup of lemon juice
- Salt and pepper
- Basil leaves (optional)
- Olive oil
Mix tomato paste or freshly juiced tomatoes (it's your call to choose) with the lemon juice, salt and pepper.
Rub the mix all around the cleansed quarter cut chicken and then sprinkle minced basil leaves on top and ½ a tsp of Aginomoto (optional). Add ½ tbsp of olive oil and then place inside the oven with 220 degrees C.
Leave it for about 125 minutes and add water if needed (but not too much, just ½ a cup is good).
And voilà, the easiest way to eat a zesty chicken without having to go to Hawaii.
