Quickly cooking the thinly sliced shellfish in a Cantonese supreme soup stock is a typical way of eating large live abalone in Hong Kong that's also available at Golden Century Seafood Restaurant. I love the soft, tender and subtle sweetness of each slice of abalone followed by a bowl of the soup stock with cooked lettuce.
