Healthy and delicious!
Ingredients:
1.5 cups almond meal
1/4 cup cacao powder
1/4 teaspoon baking soda
1 cup caster sugar
1 Tablespoon hardened coconut oil (melted to make 3-4 Tablespoons of oil)
2 eggs (1 full egg, 1 egg yolk only)
1 teaspoon vanilla essence
Easy to make and even easier to eat!
What to Do:
1/ Preheat oven to 180 degrees, fan forced. Line 7 holes of a muffin tin with paper cases.
2/ In a medium bowl, stir together the almond meal, cacao, baking soda and sugar.
3/ Melt the hard coconut oil in a small saucepan over low heat. Allow to cool. Pour into a small bowl. Add the full egg, egg yolk and vanilla essence. Stir.
4/ Pour the wet mixture into the dry mixture and combine with a large metal spoon. The mixture is very thick.
5/ Use a tablespoon to spoon out the mixture into the paper cases, filling each halfway. Use wet fingers to press the mixture down firmly into the cases.
6/ Bake for 17 minutes and allow to completely cool. Serve!
Crunchy top with s soft centre. Yum!
