The words Brisbane and Glamour have never really gone together. But Brisbane and Style – now that's a combo that's beginning to garnish this beautiful city with elegant boutiques and trendy restaurants.

Among the latest trendy restaurants to appear on the popular James Street scene is Gerard's Bistro, where dining is an international dining experience.

Born, bred and trained in Western Australia, Gerard's Bistro head chef Ben Williamson has found himself based in Perth, Double Bay's Stamford Plaza, and even Bahrain where he created and delivered the in-flight menu for Gulf Air's first-class passengers.

Ben's menu for Gerard's Bistro is inspired by southern Europe, the Middle East and northern Africa.

Hence the sensational creations of Slow-cooked lamb with smoked sweetbreads, eggplant, kashk, mint and barberries, and Moonlight Flat oysters, shucked to order, with buttermilk and smoked chilli.

Speaking with The Weekend Edition in June 2014, Ben summed up his basic food philosophy with three words: Honest, fresh, balanced.

Ben says other than the cauliflower and bekaa wing flavour bombs at Gerard's Bistro, the brisket to share is probably never going to come off the menu. MO<"The idea behind it was to present the ultimate 'make your own' kebab, or shawarma. In Bahrain, it was the go-to hunger meal. There was a dodgy street full of vendors we called 'Shawarma Alley' that I'd go to almost daily when I was in town – it was so simple and so good.

"They were smaller than the kebabs you're used to here, about the thickness of a 20-cent piece and packed with flavour. As it was so busy, it was always fresh. Fresh flatbread off the saj, grilled meat, garlic sauce, onion and herbs – that was it.

"The brisket is the massively tricked-up homage to that, using the same flavour principles, and the Moubaraks' mum makes the saj bread for us daily."

With a menu to fly you high to another world, Gerard's Bistro is open for breakfast, lunch and dinner on most days. Monday – 6pm until late; Tuesday-Sunday – 12pm until late; Breakfast on Saturday and Sunday – 8am to 11:30am.
