According to Jamie Oliver 'There's nothing Gennaro doesn't know about pasta.' After going through cover to cover to select my first recipe, I was pleased by the diversity of recipes, as well as all the tips and techniques covered.
I settled on Marubini Al Brodo Di Tre Carni Della Mamma Di Paolo, translated Marubini in Three-Meat Broth. It is a filled pasta served in the broth you cook your meats in. The recipe I choose comes from one of Gennaro's friends in Northern Italy.
I had lots of time on my hands for an afternoon in the kitchen and really enjoyed making the Marubini. Would be great to do with the kids or to cook and freeze. What I don't recommend is doubling the recipe as I had so much filling, it made over 300 Marubini. Because it is served in the broth, it has some great immune-boosting benefits. Everyone wanted a second serving at my place!
The recipe was very easy to follow and whilst it took over 3 hours to make the broth, I was begging for more. In the back of the book, there are a whole load of traditional sauce recipes. So if you have stocked up on store-bought pasta, this will provide great inspiration for a sauce.
I had so much, I froze some of the Marubini and the Broth separately and pulled it out one night to make a sensational meal in just under 5 minutes.
