If you are anything like me, then you love the smell of cooking a roast chicken in the colder months, to have with roast vegetables and gravy and all the trimmings. It isn't a meal that we generally cook in summer in Australia, as it makes the house too hot to have the oven on for an hour or more. Our family recently invested in a Weber Kettle barbeque however, so now we can cook roast meats all year around and enjoy the beautiful flavours of a roast meal.

This recipe below, is a flavour combination of spices that the whole family loves. The lemon inside the cavity keeps it juicy and the spice combination penetrates into the chicken with a mild garlic and onion flavour. It is even better the next day cold in sandwiches, when you can still taste the garlic and onion flavour through it. Why don't you try a new roast chook recipe, this weekend?



Ingredients:

**2kg whole chicken
1/2 lemon
2 Tablespoons olive oil
2 Tablespoons garlic powder
2 Tablespoons onion powder
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper**



What To Do:

Step 1: Remove the chicken from the fridge 30 minutes prior to preparing, so it comes to room temperature.

Step 2: Preheat the oven to 180 degrees, or preheat the Weber.

Step 3: Wash the chicken under the tap, pat it dry with paper towel and place it on a chopping board. Cut off the excess skin around the bottom cavity and place the half lemon into the cavity.

Step 4: Combine the spices in a small bowl.

Step 5: Pour the olive oil into your hands and rub it into the skin.

Step 5: Scatter the spice rub mixture all over the chicken and rub it in.

Step 6: Place the chicken on a roasting rack in a roasting tin, then cook in the oven for 1 hour and 20 minutes or longer if needed, so the juices run clear when you stick a knife into it. Place a tray of roast vegetables on the bottom oven tray, 45 minutes before the end of the cooking. (If you are using a Weber Kettle, then place it in the Weber over a drip tray with roast vegetables all around it).

Step 7: When the chicken is cooked right through, pull it off the roasting rack onto a plate and let it rest for 15 minutes. Cover it with foil to keep it warm. Serve with roast vegetables and gravy.
