Garlic Prawns & Mushroom Burger Recipe

I've always walked past the delis at supermarkets and noticed the piles of garlic prawn meat for sale, but I never got around to buying any. I figured that it's probably much cheaper to just make my own, and though I still don't know that for sure, I have to say that I'm quite pleased with the end result of my garlic prawn cooking experiment.



I was inspired by this recipe I found while digging around the Internet. I changed it quite a bit and added some stuff of my own. All the measurements here are just for one serving, so if you're thinking of feeding a group, just multiply according to the number of people!

Ingredients
100g of raw prawn meat, peeled and deveined
50g button mushrooms
A handful of baby spinach leaves
2 cloves of garlic, chopped
A tablespoon of finely chopped brown onion
2 tablespoons of butter
A bread roll or burger bun
Salt
White and black pepper
Juice from 1/4 of a lemon
Chopped parsley
Chilli flakes (optional)
Method

1) Put a pan on low heat. Cut the bread roll in half and spread butter on the insides. When the pan is warm enough, put both pieces of bread in the pan, butter-side down.

2) Season the prawns with a generous sprinkle of salt and white pepper. Slice the mushrooms into chunky pieces.

3) When the bread is heated all the way through and crispy to the touch, remove and place them on a plate. Put a tablespoon of butter into the warm pan, and set it to medium-high heat.

4) When the butter is hot and melted, sauté the spinach leaves until wilted. Arrange onto the bottom half of the bread roll.

5) Add the rest of the butter and toss in the onion. Cook the onions until fragrant, then add in the garlic. I add the garlic in a bit later so they won't burn. Add in the mushrooms.

6) Grind some black pepper into the pan and sauté the mushrooms until they are softened. Then add in the prawns. Cook everything together until the prawns have turned pink, then add in the lemon juice. Season with salt and pepper, if needed. Make sure to cook the prawns thoroughly.

7) When everything is done, turn off the heat and sprinkle the chopped parsley into the mixture, giving it a quick stir. Spoon the prawns and mushrooms carefully onto the bed of wilted spinach. You can add in some chilli flakes if you want to. Finally, top it with the upper half of the bread bun!

This is a really simple dish, and it's not too filling or heavy. I think the lemon really adds this fresh edge to it. Feel free to use any kind of mushrooms you want, and add in more butter if the dish needs it.
