Located at Healesville in Victoria's Yarra Valley region, Four Pillars Distillery has been crafting gin since 2013. The purpose-built distillery opened in November 2015 and now houses four German Carl stills of various sizes. Within the distillery building they hold tastings, masterclasses, special events and there is a gin/cocktail bar as well as a shop of their products including the unique orange marmalade. The four pillars of their business are the quality of the stills, the water, the botanicals and love.
Guided tastings cost $10 a head which is redeemable upon the purchase of a 500ml or 700ml bottle of gin. During the tasting experience, our group of five were educated in the intricacies of crafting Four Pillars gin and instructed on the correct way to savour the complex flavours. Our passionate guide Lizzie made the experience a lot of fun and it was very interesting to learn about the process of distillation as well as the various botanicals used to create the unique flavour profiles.
Four Pillars is not as juniper 'heavy' as traditional gins and is flavoured with Asian spices, citrus notes and native Australian botanicals like lemon myrtle and Tasmanian pepperberry. The team love to experiment with flavours and have developed a Christmas pudding gin, one perfect for making spicy Negronis and the very popular "Bloody Shiraz" gin.
Visitors who are not interested in gin or having a tasting are welcome to take a seat in the bar for a beer, wine or cocktail. The staff are all friendly and excited about their workplace and there is a happy lively atmosphere in the tasting area and bar.
