Vietnamese is one of the healthiest cuisines in the world and requires a fine balance between herbs, spices and other condiments. What better way to experience it than to take a hands-on Vietnamese cooking class with the experts at Foodie Trails in Bentleigh.
The class starts with a little introduction about the instructor and assistant. To kick things off, we were handed out aprons and started discussing the elements of Vietnamese cooking, including the ingredients, technique and lots of handy tips. A few of these included keeping your fish sauce refrigerated, using coconut vinegar for pickles, and bruising the lemongrass for added flavour.
The foodie trail classes are very hands-on, casual and intimate so that you get lots of help and attention from the cook. In this particular class, we learnt how to prepare a few dishes including my favourite, rice paper rolls with marinated meats. I had previously tried these at home and failed miserably but after taking this class, I am now confident enough to host a rice paper roll party.
The other dishes included the much loved crispy Vietnamese pancakes (banh xeo) topped with fragrant fresh herbs, A thinly sliced carrots, daikon and cucumber pickle, which is perfect to accompany a crusty bánh mě, the ever-popular flavourful Nuoc Cham dipping sauce and a delicious Vietnamese braised eggplant clay pot, which I have now added to my weekly repertoire. Once we were done cooking, we had the opportunity to share a meal with everyone, which was a lovely way to wind up the night.

I have watched many cooking TV shows in my time, however, it doesn't compare with the hands-on experience of being in a real live class with a real live knowledgeable teacher. We thoroughly enjoyed our experience and will be returning to try our hand at Thai cooking next!
