If you're anything like me, then you love delicious, healthy and
easy recipes with minimal ingredients - that the whole family loves. There is nothing worse than spending a long time making a recipe and then only one person likes it - which is usually me! These banana recipes below are enjoyed by everyone in our family, so they are worth making time and time again. I hope your family likes them, just as much as mine...
1/ Easy Banana Muffins
Ingredients: 125g margarine, 3/4 cup of sugar, 2 eggs, 3 bananas, 2 cups self-raising flour and 2 Tablespoons milk. Icing: 1/2 tub of Philadelphia light cream cheese, 3 tablespoons of icing sugar and 1 teaspoon of vanilla essence.
Preheat oven to 180 degrees. Cream margarine and sugar. Add eggs and beat well. Add remaining ingredients. Spoon mixture into muffin tray and bake for 20 – 25 minutes. When cool, mix together the icing ingredients and smooth over muffins generously (it's the best part!). Top with dried bananas for decoration.
2/ Banana & Choc Chip Muesli Bars
Ingredients: 2 cup oats, 1/2 cup olive oil, 1/2 cup desiccated coconut, 2 bananas (mashed), 40g choc chips, 1/4 cup dried apricots or mixed peel (finely diced), 1 egg (beaten), 1 Tablespoon honey and 3/4 Tablespoon cocoa powder.
Preheat oven to 180 degrees. Combine all the ingredients in a bowl and mix well. Line a rectangle slice tray with baking paper and press the mixture firmly into the tray with a fork. Bake for 25 minutes until brown. Let it cool in the tray and then put it in the fridge to harden. Remove from tray and slice into muesli bars. Store in an airtight container in the fridge.
3/ Banana & Chia Overnight Breakfast Bowl
Ingredients: 1/3 cup yoghurt, 1/3 cup milk, 1 banana (mashed), 2 Tablespoons white chia seeds, 2 Tablespoons oats, 1 teaspoon vanilla essence and a drizzle of honey to taste.
Combine all the ingredients in a bowl, ensuring you stir well and all the chia seeds are submerged. Cover with cling film. Leave overnight in the fridge. Serve with raspberries.
4/ Banana & Chocolate Energy Balls
Ingredients: 1 and 1/4 cups of oats, 1/2 cup desiccated coconut, 3/4 cup unsalted cashews, 1 banana (mashed), 1/4 cup cocoa powder, 1/4 cup choc chips, 3 Tablespoons honey and 1 teaspoon vanilla extract. Optional: Desiccated coconut to roll in.
Add the oats, coconut and cashews to the food processor and blitz first. Add the remaining ingredients, except for choc chips. Blitz until it forms a ball. Take out blade and stir in choc chips. Roll into balls. Store in an air-tight container in the fridge.
5/ Banana Ice-Cream
Ingredients: 2 frozen bananas (sliced prior to freezing), 1 Tablespoon peanut butter, 1 Tablespoon honey (or more to taste) and 1 Tablespoon milk.
Add frozen bananas to a high powered food processor and pulse. When it starts to get stuck, add the remaining ingredients to the top. Blend until smooth. Serve immediately.
