If you are anything like me, then you are always on the lookout for easy weeknight dinners, that the whole family will love. I often make two dinners - one for the adults and one for my daughter, but it is so much easier to find something that we can all eat together. This recipe puts together everything she likes, so there is nothing that she can pull out and say
"yuck" (like she did when I included baby spinach on my first attempt!).
We serve this pasta bake with a fresh side salad and it disappears every time. Why don't you make it for dinner tonight for your family?

An easy weeknight meal for the whole family
Ingredients:
300g penne pasta
2 garlic cloves, finely chopped
200g mushrooms, finely sliced
2 handfuls of shredded BBQ chicken
500g jar of your favourite pasta sauce
100g grated cheese of your choice

What To Do:
Step 1: Preheat oven to 200 degrees, fan forced.
Step 2: Boil pasta for 7 - 8 minutes (3 minutes less than the instructed boiling time). Drain.
Step 3: Meanwhile, heat 1 Tablespoon of olive oil in a fry pan. Cook garlic and mushrooms for 5 minutes until soft.
Step 4: Place the the pasta in the bottom of a medium-sized casserole dish (ours is 25cm x 20cm), then scatter over the BBQ chicken and mushroom mixture and then pour over the pasta sauce and 1 cup of water. Top with grated cheese and bake for 20 minutes until the top is golden.
Serve with salad and enjoy!
