A storefront with a brightly lit sign displaying only the word 'Coffee' out the front, has some clear confidence about it. This is all the more true in a suburb such as Collingwood, where folks take their coffee seriously, and the words 'instant' and 'coffee' are viewed as a unholy combination.

In this arena then, exists 'Coffee', though its full name is ''. Walking in, there is no doubt this place is 'cool'. You will either not notice this as you yourself are cool, or perhaps instead like this writer, notice it because you're unsure you fit such a tag. In any event, the team behind the counter is a polite bunch, and won't bat an eye whether your wearing Crocs or a cravat.



The cafe's interior is rich and robust. Yellow and royal blue paint is mixed in with the obligatory load bearing beam and exposed brickwork. While this lends itself well to the apparent history of the building, the large storefront windows also deliver a very modern and open feel to the space. Sitting inside you're at once appreciative of the old, while conscious you are in a space keen on the new.



Much of this review so far has paid attention to the surrounds, and this is appropriate, for all over they contributes to what is the core focus of the cafe: its coffee. While the vibe remains friendly, it is clear they regard beans as a serious business. It appears clear that the design of the building - which can perhaps be summed up as impressive but minimalist - is designed to draw you inside, but then to ultimately cede attention to what's on offer within.

In a suburb with no small amount of competitors it would be easy for Everyday to become satisfied with just being a 'good' cafe. Instead, they've looked to ensure they stand distinct. Particularly impressive is a willingness to source a number of different beans for different offerings. To some this may seem excessive, but Everyday's consistently busy patronage is proof that it is no less clearly appreciated. Overall, however one chooses to drink their coffee, it always arrives tasting rich, sharp and smooth.

Beyond the in-store offers, also looks to remain in mind of customers. With an invested and committed use of Twitter and Instagram (links on website) that promote the cafe's happenings - alongside an online store - it is clear Everyday is a cafe that looks to go above and beyond in reaching out to its base. Even if you are something of a simple flat white guy or girl, it is hard not to appreciate the effort that has gone into making a leading Collingwood cafe.
