Crunchy taco shells, flour tortilla's filled with creamy chicken and tomato salsa, crispy corn chips and spicy rice - is your mouth watering yet? How about fresh salad, cheesy dips and a shot of clean tequila to wash it all down?Not to mention funky décor and a gorgeous bay view.

Named after the famous Mexican dish, Enchiladas Restaurant is located on the Scarborough waterfront, thirty minutes north of Brisbane City, and is by far the best Mexican restaurant I have ever been to.

For those who are not too familiar with the cuisine, Mexican is tasty combination blend of Aztec and Spanish. When most people hear the word 'Mexican', they naturally think of chilli and steamy spices. Enchiladas Mexican Restaurant takes great care to blend the spices and chillies to create a mild taste without setting your mouth on fire. Of course they can spice up the menu to taste for chilli lovers!

There are plenty of Mexican eateries out there, but no other place has the Enchilada's chilli con queso dip recipe, no other restaurant has the special creamy chicken soft taco and there's nothing quite like the Enchiladas very own corn chips that can be eaten by the packetful completely on their own without any sort of condiment.

The menu at Enchiladas is vast, from vegetarian meals to make-your-own fajitas, where your favourite ingredients are served on multiple hot plates ready for you to create to your perfect taste.

A popular meal is the Tos tada el grande, a giant shell of a fried pastry settled in a serving of beans, filled with crispy lettuce, diced tomato, shredded cheese and the tasty chicken found in most of the chicken meals. The tos tada shell breaks and the burst of flavour seduces the taste buds, and before you know it, you're ordering a shot of bitey tequila.

My personal favourite is the Dos Tacos ordered in a soft shell. The meal is served with two tacos on a bed of rice and salad. It's the texture of the chicken filling that is addictive-tender chicken pieces teaming up with an irresistible creamy sauce to ensure it's the best taco you ever sink your teeth into.

As well as fabulous food, Enchiladas has an array of Mexican beers to quench your thirst and plenty of hot tea and coffee.

Steak and seafood is also on the menu if Mexican cuisine is not your thing.

Another famous dish amongst restaurant diners, is the Chocolate Nachos dessert. A one of a kind specialty with corn chips in a fried batter infused with warm chocolate syrup.

Enchiladas is a licensed venue fully equipped with cocktail bar and many tequilas to choose from.

Dine on Tuesday and Thursday evenings to receive a free dip entree, choosing from the amazing chilli con queso, guacamole, salsa and frijole with corn chips. If you find it hard to choose, which you will, go for the combination dip alternative where you get a taste of all four served in a warm tortilla cup.

If you're not a big eater, there are plenty of light meals on the menu.

Enchiladas has won many awards including Best Family Restaurant 2008 and has been featured every year in the Herald Business Achievement Awards since 1999 either as nominee or finalist.

You can treat your tastebuds seven days a week from 5pm and lunch time on weekends only from 11:30am to 2:30pm.

Don't book a ticket to Mexico, jump on the highway Northbound from Brisbane, taking the Redcliffe exit and follow the signs to Scarborough for the best in Mexican. You will keep returning for more.
