Another restaurant in the exclusive Carlton dining area is the Embrasse. This food outlet is still in its infancy stages; it opened a little less than two years ago. Thus, it can be easily missed when you choose to eat at your old Carlton favourites. The chef is Frenchman Nicolas Poelaert, who has brought all of his influences and passions into cooking in Melbourne.

You're in for a real treat at the Embrasse. Just as you allegedly take the weather with you wherever you go, you also bring your experiences into new territory. Nicholas Poelaert worked in one of the choicest restaurants in his homeland City of Bras. Apart from time and place, his cooking is indistinguishable.

Without giving too much away, the menu features delicious dishes like barley fillet pork, potato veloute and a number of luscious desserts with fruit from the chef's backyard. Needless to say, this place is very much on the expensive side but is worth the visit.
