When I entered Elixir Cafe, I was greeted straight away by friendly and professional staff. In particular, the co-founder of the business, David Narciso, showed me to the roasting warehouse, where the big bags of coffee get delivered from the best producers of coffee in the world - Papua New Guinea, India, Nicaragua, Columbia, Guatemala and Brazil.
David introduced me to his father Luigi, who is in charge of the roasting of the raw coffee beans for the customers.
It was after many trials, the two brothers, Jason and David Narciso, were able to obtain award-winning blends which now get distributed into many coffee shops in Brisbane. Jason and David learnt about coffee and roasting raw coffee beans since they were children from their parents, Luigi and Carmel.
The family used to roast coffee from the 80s with their first business in Fortitude Valley. Back then, the Narciso's family used to roast coffee for their customers, the number of which grew and a new bigger establishment was necessary. The business was getting bigger, so the family needed also a bigger roasting machine.
In particular, Luigi showed me all the passages of the art of roasting coffee, the importance of the quality of raw beans, the time and the temperature needed to roast the beans. The warehouse is filled with heavy bags of raw beans. A little crane grabs the sack that gets ripped open to allow the coffee beans to spill into the container and they then get sucked into each silo. The machine is completely automatic and gets programmed to make the perfect blend that is roasted in the machine.
The big roasting machine has its own history too. It came all the way from beautiful Italy. It was designed, built and put together in a workshop in Ferrara, Italy and then dismantled, put in a big container and shipped all the way to Brisbane to the Narciso family. Once in Narciso's workshop, the machine was put together again to work.
The formidable machine is all automatic and can roast tons of coffee to satisfy the demand of roasted coffee beans. The modern roasting machine roasts the beans at a constant stable temperature and in perfect timing.
The coffee beans, when raw, are a very light brown colour and once roasted, they are a much darker brown. Ground the beans and they release their rich and unbelievable glorious aroma!
