When it is another rainy Sydney afternoon, what better way to lift your spirits than by a hot bowl of delicious pho?! This classic Vietnamese noodle dish is a cult favourite and much loved by locals as a quick breakfast soup.

The Food
Vegan Pho Noodle Soup
The soup has been made from scratch with a veggie broth. Upon first taste, it is hard to believe there aren't any animal products used! It tasted so similar to the actual pho's beef broth and was very rich and flavourful.
The flat rice noodles were cooked to perfection, not too soft and not too hard. The fresh bean sprouts add a great texture to the dish and the mint brings all the different flavours to another level. The veggies and tofu added fantastic colour and nutrition to the dish.
I love mixing in the accompanying hoisin and chilli sauce for a more strong flavour. Try it next time!
Note: People who are not fans of coriander should ask to have this removed from the noodle soup.
The Springrolls
We ordered the vegan spring rolls, which came out very crispy. Although they were very fresh, it was a little dry as it mostly consisted of chickpeas.
The Atmosphere The restaurant was very lively and busting, in the hip suburb of Darlinghurst. During the busy hours, it is usually always packed (a sign that it is good!).
Tip: The restaurant regularly offers discounts on EatClub, so keep your eye out and you may just be able to score some great noodles at a discounted price!
