Easy Weeknight Recipes Using BBQ Chicken

For many households around the country, picking up a BBQ chook on the way home is a quick and easy dinner for the whole family. You can split it up and enjoy it with a salad and garlic bread and have a complete meal for all ages. Everyone loves BBQ chicken!

If you would like to jazz it up however, for something different, there are many quick and easy options to choose from. Keep reading for 5 ideas which you can make tonight!



1/ Spicy BBQ Chicken Tacos

Ingredients: 300g jar of mild salsa, 1 cup water, 2 Tablespoons tomato paste, 1/2 teaspoon chilli powder, 1/2 teaspoon ground coriander, 1 teaspoon ground cumin, 2 cups BBQ chicken, tortillas, taco ingredients (lettuce, tomato, grated cheese).

In a large fry pan, stir in the salsa, water, tomato paste, chilli powder, cumin and ground coriander. Heat slowly and add the BBQ chicken and cook until it starts to boil. Simmer for 5 minutes to heat up. Place in a bowl with tongs and put it on the table to share with your favourite taco ingredients and tortillas.



2/ BBQ Chicken Pasta

Ingredients: 2 cups BBQ chicken (shredded), 400g can diced tomatoes, 200g dried penne pasta, 2 cups chicken stock, 1/3 cup BBQ sauce, 1 cup grated light cheese, 3 slices bacon (chopped), 3 shallots (sliced).

In a large saucepan, add the BBQ chicken, pasta, tomatoes and chicken stock. Mix to combine. Cover and bring to the boil. Simmer for 15 minutes, stirring occasionally. Meanwhile, cook the bacon in a fry pan until crispy. After 15 minutes of boiling, check the pasta is cooked (if not, add more water and continue to simmer until cooked). When most of the liquid is absorbed, add the BBQ sauce, bacon, cheese and shallots. Stir and serve.

3/ BBQ Chicken Pizza

Ingredients: 1 large pizza base, 1 - 2 cups BBQ chicken breast (shredded), 1/2 capsicum (sliced thinly), 1/2 red onion (sliced), 5 mushrooms (sliced), 1/3 cup pizza sauce (either BBQ sauce, tomato paste or tomato relish), handful of mozzarella cheese.

Preheat oven to 200 degrees. Spread the BBQ sauce/ tomato paste/ tomato relish on the pizza base and scatter the BBQ chicken and your favourite toppings - we use capsicum, red onion and mushrooms. Top with mozzarella and cook for 15 minutes.



4/ BBQ Chicken and Corn Soup

Ingredients: 2 cups BBQ chicken breast (shredded), 1 litre chicken stock (salt reduced), 1 chicken stock cube, 375g can of creamed corn, 375g can corn kernels (salt reduced), 2 Tablespoons cornflour, 1/2 teaspoon ground ginger powder, 1/2 teaspoon sesame oil.

In a pot, combine the sesame oil, chicken stock, ginger powder, crumbled chicken stock cube, creamed corn and corn kernels. Bring to the boil. Stir in the BBQ chicken and bring to the boil again. Combine the cornflour with a tablespoon of water and add to the soup to thicken. Serve on its own, or stir through 2 minute noodles.

5/ Easy BBQ Chicken & Zucchini Risotto

Ingredients: 1 leek (white part, sliced), 1 stick of celery (sliced), 1 zucchini (sliced and quartered), 2 cups BBQ Chicken breast (shredded), 1 cup Arborio rice, 500ml chicken stock (salt reduced), 185g Carnation Light & Creamy Evaporated Milk (1/2 a 375g can), , 1/2 cup frozen peas and 3/4 teaspoon minced garlic.

In a saucepan, add 1 tablespoon of olive oil and cook leek, garlic and celery until soft. Add rice and stir for 1 minute. Add stock and milk and bring to the boil. Simmer for 15 minutes. Add zucchini, BBQ chicken, peas and cracked pepper and cook for 5 minutes. Serve.
