Easy Vegetarian Mushroom Burger Recipe

Simple ingredients & made in 4 easy steps
If you're anything like me, you are always after quick and healthy dinner recipes - which don't have many ingredients. This burger recipe is a favourite in our household - it makes two large burger patties for us, and then we cook up beef burgers for the kids. Just add the mushroom burger patties to fresh burger rolls with some crispy lettuce, tomato, beetroot and relish, and you have an easy and healthy, lunch or dinner. Tastes like mushroom, looks like meat!


Ingredients

2 cups finely chopped mushrooms (approx 200g)
1/4 red onion, finely chopped
1/2 cup plain flour
2 Tablespoons fresh coriander, chopped
1 egg
2 teaspoons Worcestershire sauce
1 cup breadcrumbs for rolling

Steps 1 - 2


What To Do in 4 Easy Steps:

1/ In a large bowl, combine the mushrooms, red onion, flour and coriander.

2/ Stir in the egg and Worcestershire sauce. Use your hands to form the mixture into two large patties.

3/ Add breadcrumbs to a large bowl and then roll the patties in the breadcrumbs.

4/ Add 1 Tablespoon of olive oil to a frypan and fry on each side for 3 - 4 minutes, until heated all the way through.

Feel free to adjust the recipe to what you have on hand - such as using dried thyme/ herbs instead of fresh coriander and oil, instead of egg. If you are looking for a delicious side dish, peel and cut up 1 sweet potato and then spread the chips out on a lined baking tray, drizzle with olive oil and scatter smoked paprika over the top. Bake at 200 degrees (fan-forced) for 20 - 30 minutes. You can't be at burger and chips!
