Do you love a good soup or thick stew? Soup is a delicious dinner option during the winter months, as it warms you up from the inside and it is jam-packed full of vitamins to boost your immune system. This soup recipe below has been a favourite in our family for years - my husband calls it the "detox soup" as I always seem to cook it after a weekend of too much eating out! Although I have called it a
soup, it is more like a
stew, with soft vegetables and a tasty balance of flavour. Why don't you give it a try (and detox!) this weekend?

A hot bowl of immune-boosting goodness...
Ingredients:
2 Tablespoons olive oil
1 brown onion (chopped)
3 garlic cloves (finely diced)
2 carrots (sliced and halved)
2 sticks celery (sliced)
1 zucchini (sliced and quartered)
2 potatoes (chopped into 5cm cubes)
4 cups beef stock (salt reduced)
810g can whole tomatoes
1/4 cabbage (sliced and chopped)
400g cannellini beans (drained and rinsed)
What To Do
Step 1: Heat oil in a large pot and saute garlic and onions for 5 minutes, until soft.
Step 2: Add carrots, celery, zucchini and potatoes and cook for 5 minutes.
Step 3: Stir in stock and tomatoes and bring the mixture to the boil.
Step 4: Add cabbage and beans and simmer, stirring occasionally, for 1 hour. Cover the pot with a lid with holes, to let air escape.
Step 5: Season with pepper and serve with crusty bread.
