Tabbouleh with Quinoa Salad Recipe

An easy recipe that is ready in 2 easy steps
If you are looking for an easy and healthy salad recipe that will add some flavour to your meals, wraps and sandwiches, then you can't go past tabbouleh. The original traditional recipe came from the Middle East and it is now a popular salad recipe all around the world. It combines the blended flavours of parsley and mint, which awakens the taste buds and creates a burst of freshness to any dish..

This recipe, below, also adds quinoa to bulk it out and make it more filling, while adding even more nutritional benefits. There are only 7 ingredients and it is ready in 2 easy steps. If you love the flavour of fresh herbs, then you will love this recipe this summer!



Ingredients:

1/2 cup quinoa, rinsed underwater in a sieve
2 tomatoes, de-seeded and chopped
2 shallots, sliced
4 Tablespoons parsley, chopped
4 Tablespoons mint, chopped
3 Tablespoons lemon juice
2 Tablespoons olive oil




What To Do in Two Easy Steps:

Step 1: In a small saucepan, add the quinoa with 1 and 1/2 cups of water and boil for 10- 15 minutes, until the water has evaporated and the quinoa looks open and fluffy. Remove from heat and cool down.

Step 2: In a bowl, combine the tomatoes, shallots, parsley, mint, lemon juice and olive oil. Stir in the quinoa and serve. Store in the fridge.

This recipe can be used as a side salad on its own, in a sandwich, piled into a wrap or combined with chicken or other proteins, for a healthy work lunch. I personally make this recipe every couple of weeks to have ready in the fridge, as takes less than half an hour to make and I love the fresh, unique flavour.
