Easy Sultana Cakes with Lemon Icing Recipe

They look good, don't they? These cute little sultana cakes are dripping with lemon icing and are so easy to make, that you can make them in minutes! They are perfect to make with your kids, have simple ingredients that you may already have in your pantry and they are quick to make, so your kids don't have to wait too long to get munching! Why don't you make them this weekend? Make sure you save one for yourself!
Ingredients:
**1/2 cup margarine, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla essence
1 & 1/4 cups self-raising flour
1/3 cup milk
1 & 1/2 cups sultanas**
**Icing:
1 cup icing mixture
1 Tablespoon lemon juice
1 Tablespoon milk**
What To Do
Step 1: Preheat the oven to 180 degrees, fan forced. Spray a mini muffin tin with oil, or place in mini muffin patty pans (which kids love).
Step 2: In a large bowl, mix together the margarine and sugar until soft and creamy.
Step 3: Add the vanilla, milk and eggs and combine.
Step 4: Stir in the flour, then fold in the sultanas.
Step 5: Place one tablespoon of mixture into each mini muffin tin hole. Bake for 10 - 12 minutes, until cooked through and they are starting to brown on top. Allow to cool.

Step 6:** Combine the icing ingredients together and then place a teaspoon of mixture on top of each mini cake. Decorate with a blueberry, or leave plain.
Step 7: Stand back and watch them disappear!
