If you're reading this, then you love a good seafood chowder as much as I do. The first time I tried it was when I was holidaying in the South Island of New Zealand and seafood chowder was on the menu in every restaurant we went to. It was the perfect way to appreciate their beautiful seafood and warm up from the inside in 0 degrees!

When we returned home, I never thought to try and replicate it myself as I knew I wouldn't be able to do it justice, but after some reminiscing about our holiday through COVID, I decided it was time to give it a go! This recipe has taken a while to perfect, as each time I make it we decide whether it needs more cream, less cream, less potatoes, more corn....but we have finally settled on this recipe! It makes 3 large bowls, or 4 small bowls and we love it. It is easy to make on a weeknight and you can eat it all year around, not just in winter. Enjoy!



Ingredients:

**3 potatoes, chopped into large chunks
1 Tablespoon olive oil
1 onion, diced
1 carrot, sliced and quartered
1 cob frozen corn (or 1 cup corn kernels)
2 Basa fillets, defrosted and chopped into large chunks
200g - 300g frozen prawns (without tails), defrosted
1 Tablespoon plain flour
2 cups chicken stock (I use Oxo stock cubes)
1/2 cup lite cream
1/2 tablespoon dried parsley
Pepper to taste**



What To Do:

Step 1: In a medium saucepan, boil the potatoes for 10 minutes. Drain.

Step 2: Meanwhile, microwave the corn for 1.5 minutes and then cut off the kernels with a sharp knife. Add to a large pot with the olive oil, onion and carrots. Cook for 5 minutes.

Step 3: Add the flour to the pot and stir for 1 minute. Take the pot off the heat and add the stock and cream and stir. Return the pot to the heat and bring to a low simmer. (The liquid doesn't look like much, but when you add the rest of the ingredients it expands).

Step 4: Add the cooked potatoes, fish and prawns and simmer for 5 minutes. Stir and check that the fish is cooked through and all of the prawns have turned orange.

Step 5: Stir in the parsley and add cracked pepper to taste. Serve!

Feel free to use this recipe as a base and make your own adjustments to taste. It's a keeper!
