Easy Quinoa, Raspberry & Maple Syrup Porridge Recipe

Do you love to go out for breakfast at your favourite cafe? Cafes and restaurants always make their breakfast bowls look so attractive with fresh, seasonal fruits and a variety of delicious yoghurts and toppings. It can take some effort to create the same breakfast meals at home, but once you find the right combinations, you can make them whenever you like.
This easy recipe for quinoa porridge below, is a bowl that I enjoy for breakfast or after the gym, to give me energy for the day ahead. I add vanilla yoghurt, maple syrup, walnuts and sliced apple for some crunch and sweetness, however feel free to add your own favourite toppings. This recipe is for one person, so make it just how you like it!
Ingredients (Serves 1):
**1/2 cup white quinoa
1 cup light milk
1 Tablespoon raw sugar
1/4 teaspoon cinnamon
1 Tablespoon maple syrup
1/2 teaspoon vanilla essence
1/2 cup frozen raspberries**
What To Do
Step 1: Place the quinoa in a metal sieve and rinse underwater. Set aside.
Step 2: Pour milk into a small saucepan and place on low heat on the stove. Ensure the temperature is low, so the milk doesn't scorch the pan. Move the milk around with a wooden spoon. Slowly bring to a low simmer.
Step 3: Add the drained quinoa and simmer on a very low heat for approximately 10 minutes, stirring. The temperature needs to be low and the quinoa cooked slowly, for the seeds to fluff up and open.
Step 4: Stir in the raw sugar, cinnamon and maple syrup. Stir for 5 minutes until the liquid has almost gone.
Step 5: Stir in the vanilla extract and raspberries and stir again until liquid has almost gone.
Step 6: Place into a bowl and add vanilla yoghurt, walnuts, sliced apple and a drizzle of maple syrup. Then sit back, relax, imagine yourself in your favourite cafe and enjoy!
