A salad for when you can't be bothered

This is a salad that my Mum used to throw together, making a huge bowl of it. Use the left overs with cold sliced meat for sandwiches the next day. Or for non meat eaters, try it with sliced up cooked veggie patties. The ones you buy at the deli counter then heat up in a frying pan. Slice them side-ways into 2 pieces. But I digress! Here's Mum's salad recipe.
1 bag of pre-washed mixed salad leaves (or roughly shred up a small ice-berg lettuce)
1 cup of grated tasty cheese
2 small or 1 large carrot, peeled and grated
1 red onion, diced
2 tomatoes, cut into wedges
I/2 a peeled cucumber, sliced

Then you can add anything else you've got lurking in the fridge. Use up that half an avocado, dice up some celery, throw in some chopped sun dried tomatoes, crumble in a bit of feta, olives are nice too.

Toss everything together.

Mum used to use bottled dressing but I prefer to use about 1/4 cup of olive oil and squeeze a small whole lemon in, then mix through.

Tastes better when it's had a couple of hours to absorb the flavours.
