Easy Pineapple & Coconut Slice Recipe

An easy recipe you can make today


Do you love the tropical combination of pineapple and coconut? Then why not put them both together in the one slice, that the whole family will love! They are easy to make and they don't last long, especially if you serve them straight out of the oven!

Ingredients:

1 and 1/3 cup self-raising flour
3/4 cup sugar
1 teaspoon baking powder
1 cup desiccated coconut
150g margarine, melted
3 eggs, stirred
1/2 cup tinned crushed pineapple

Optional icing: 100g cream cheese, 3 Tablespoons icing sugar, 1/2 teaspoon vanilla essence.

Quick and easy to make!


What To Do:

Step 1: Preheat oven to 180 degrees, fan-forced. Line a slice tray with baking paper.

Step 2: In a large bowl, combine the flour, sugar, baking powder and coconut.

Step 3: In a smaller bowl, combine the melted margarine, eggs and pineapple. Pour into the larger bowl and mix well.

Step 4: Pour the cake mixture into the lined slice tray and bake for 25 minutes, or until cooked through. Cool in the tray and then tip out onto a cooling rack.

Step 5: Add icing, or leave the slice plain. Slice into squares and serve.

It sounds really yummy!
When I went to Norfolk Island I eat a slice of cake coconut and chocolate, it was divine. The coconut seems to go so well in the preparation of cakes.
