Easy Pasta Salad Recipe - with Gluten Free & Lactose Free Options

If you are looking for a pasta salad recipe to take to a Christmas party, BBQ or lunch, then look no further! This recipe tastes very similar to the one that you can buy at Woolworths and it is very easy to make. I find this a handy recipe to take to BBQs as we have a couple of family members who are both gluten free and lactose free, and this recipe can be made to suit. It goes perfectly with anything cooked on the BBQ such as (gluten free) sausages, steak or kebabs. Why don't you make it for yourself this summer season?
Ingredients:
340g pasta (small shapes like elbows or fusilli) - plain or gluten free
330ml Praise Coleslaw Dressing (reserve 2 tablespoons)
4 Tablespoons sour cream - plain or lactose free (reserve 1 tablespoon)
2 carrots, grated
4 shallots, green parts only
1/2 red capsicum, diced
Made in a few easy steps!
What To Do:
Step 1: Cook the pasta for 10 minutes in boiling water. (If using gluten free pasta, I have found the best method is to boil the kettle and add boiling hot water to the pot and bring to the boil quickly). Drain and add to a large bowl.
Step 2: Whilst hot, add the coleslaw dressing and sour cream (without the reserves) and stir. Place in the fridge for at least 15 minutes to cool.
Step 3: Give it a stir and add the carrot, shallots and capsicum. Place back in the fridge for at least an hour, covered.
Step 4: Just before serving/ leaving for the BBQ, add the reserved coleslaw dressing and sour cream and stir through.
This recipe makes a large bowl to take to a BBQ to share, but if you are making it for your family, you could easily halve the recipe - so play around with the quantities to suit you. I recommend making it a couple of hours before you go, so it is fresh and the pasta hasn't absorbed all the dressing.
A friend of mine makes this delicious recipe every summer and she kindly gave me the recipe, so I could try and adapt it to gluten free/ lactose free ingredients. It turned out just as delicious as hers, except that the gluten free pasta sticks together by the next day, so ensure you make it and eat it on the same day. It is a winner to keep in your recipe book!
