Easy Oat & Cinnamon Pancake Recipe

If you're looking for an easy and healthy pancake recipe which will fill you up and use only six ingredients - then look no further! I started experimenting with using oats in pancakes, to make a filling breakfast for my daughter during the school holidays. This recipe, below, was the right balance of flavour and texture and we added honey and fresh berries for natural sweetness.

There are no fancy ingredients to buy - just basic ingredients you may already have in your pantry right now. Feel free use this recipe as the basic mix and then use wholemeal flour or add blueberries into the batter, to make it your own. The recipe makes enough pancakes for 1-2 people, depending on how many you like in your stack. It doesn't get much easier!



Ingredients:

**1/2 cup oats
1/2 cup milk
2 eggs
1/2 cup plain flour
1/2 teaspoon baking powder
1 teaspoon cinnamon**



What To Do:

1. In a medium bowl, add the oats and milk and put aside for 15 minutes for the oats to soften.

2. Add the eggs and stir, then add the flour, baking powder and cinnamon. Stir to combine.





3. Heat up a non-stick frypan to medium and spray the base with olive oil spray. When warm, add 2 -3 tablespoons of the mixture to make each pancake.

4. When the pancakes start to have small bubbles on the surface and look a little brown underneath, flip them over and cook the other side. Repeat flipping until both sides are nicely browned and the pancakes are cooked through.

5. Serve with honey or maple syrup and top with sweet fruits, such as strawberries and blueberries.
