A nourishing way to start your day
If you have ever been to a buffet breakfast, you may have been offered a beautiful range of cold options, such as tropical fruits, cereals and bircher muesli. When I have stayed at a hotel and enjoyed the bircher muesli, I have always wondered how I could make it for myself at home. Luckily, it wasn't as hard as I thought! It is a healthy blend of proteins, carbs, nuts, spices and fruits, which nourish your body from the inside.

This easy and delicious recipe is tasty on its own, but for me, it's all about the toppings. You can't enjoy it without the Greek yoghurt, sliced apple, crushed nuts and drizzle of honey - it's the perfect way to start your day!



Ingredients:

1 cup of low fat Greek yoghurt
1 cup light milk
1 Tablespoon chia seeds
1 and 1/2 cups oats
2 red apples, grated
1/2 teaspoon cinnamon
2 cardamom pods, cut open and seeds removed


Topping:

1 Tablespoon Greek yoghurt
1/3 cup hazelnuts, chopped
1 red apple, sliced
Handful of grapes
Drizzle of honey

Ready in just 3 easy steps!


What To Do

Step 1: In a medium bowl, combine the Greek yoghurt, milk, chia seeds and oats and sit for 15 minutes.

Step 2: Coarsely grate the apples and add to the bowl. If you prefer to, grate the apple first. Add the cinnamon and cardamom seeds and stir well.

Step 3: Divide the mixture into 4 bowls and add the toppings to your liking. Leftover bowls can be covered and left in the fridge for up to 4 days.
