A mid-week or weekend meal should be delicious and hearty yet quick to make. Keeping these things in my mind, I headed to my kitchen to make a meal that brought pure joy to my senses, my taste buds and even my watch.
Mushrooms, or "meat" of the vegetable world, are a powerful yet low-calorie food that is packed with vitamins, essentials minerals and potassium yet it is low is carbohydrate and fats. But its "fleshy" appearance can be a bit off-putting. Worry not, this wrap recipe will see you safely converting to a mushroom devotee in just one bite.
You will need: 200 grams of mushrooms, a medium onion, 2-3 red chillies, 2-3 cloves of garlic, about half an inch of ginger, a teaspoon of cumin seeds, some oil, tomato ketchup, peri-peri sauce, soy sauce, some chili flakes, tortilla wrap, cheese slice (optional) and salt.
1) Roughly chop mushrooms, onions, garlic, ginger and chillies.
2) Heat a teaspoon (or two) of oil in a pan. When the oil is hot add the cumin seeds.
3) When the cumin seeds splutter add the onions and cook it till it is brown. Next add the ginger, garlic and chillies and let it cook for a minute.
4) Add the mushrooms and cook it nicely for about 10 minutes on medium heat. Mushrooms have a lot of water content, so no need to put water.
5) Add all the sauces, the condiments and the salt and cook for another minute.
6) Place the cheese slice (if using) on a wrap. Put the mushroom mixture on top and wrap.
7) Dig in.
