Easy Mango Relish Recipe

If you're after a nice home made relish to serve on a burger or on a cheese platter, look no further. Unlike most relish, there's no need to let it simmer for hours on the stove. Just place everything in a microwave safe bowl and you're good to go.

Ingredients

3 ripe mangoes
red onion, sliced very thinly
cup white sugar
cup malt vinegar
2 tablespoons of sweet chilli sauce
1 teaspoon of garlic and 1 of ginger

Directions

1) Slice your mango flesh into small pieces and place in a glass bowl along with the rest of the ingredients. Give it a good stir.

2) Cook, uncovered, for 30 minutes on high, stirring every five minutes.

By the time it's done the relish will have thickened up quite a lot. Let it cool right down before serving on a burger, a wrap, or alongside a cheese platter.

You can also use 6 ripe peaches, plums or nectarines instead of the mango if you prefer.

If you put it into sterilised air tight jars it would last for a month
