If you are anything like me, you are always looking for something different to make for the family for lunch on weekends. During the week, we are all happy to have our packed lunches and sandwiches, but when it comes to the weekend, we want to eat something different and well, yummy! For the person who makes it, it also needs to be quick - as there will be hungry little faces waiting and watching with anticipation!
These three easy lunch ideas are meals that you can make reasonably quickly, don't have many ingredients and they all disappear within minutes. I hope your family enjoy them, as much as mine...
Ingredients: 1 long crusty baguette/ French stick, 2 Tablespoons tomato paste, 2 teaspoons dried mixed herbs (approximate), grated cheese that your kids like.
Slice the baguette thinly and lay on a baking tray. Use a small amount of tomato paste to smear onto each one. Take a pinch of dried mixed herbs and scatter a small amount onto each slice. Top with your child's favourite grated cheese - we use mozzarella so it is stretchy to eat. Place under the grill and cook for a few minutes until it starts to brown on the outside and the cheese has melted. Makes approximately 25 - 30 if you use the whole stick, however you can just cut off what you need and save the rest for tomorrow!
2/ Quick & Easy Party Sausage Rolls
Ingredients: 8 of your favourite sausages, 1/2 cup grated carrot, 1/2 cup grated cheese, 2 sheets frozen puff pastry (thawed), 1 egg (lightly beaten).
Preheat oven to 180 degrees. Line a baking tray with paper. Remove casings from sausages and squeeze contents into a medium bowl. Add grated carrot and cheese. Mix together with fingers. Cut each sheet of pastry in half. Spread the sausage meat evenly down the long side of each pastry piece, leaving a small gap from the edge. Start rolling until you get to the end and rub the egg wash along the other long edge to seal. Place the sausage roll on the baking tray so the join is underneath. Rub the rest of the egg over the top. Cut each log into 6 rolls. Cook for 25-30 minutes. Rest on tray for 5 minutes. Makes 24.
Ingredients: 500g chicken mince, 1 egg, 35g packet of mild taco seasoning (salt reduced) and 1/3 cup breadcrumbs, plus extra for rolling.
Combine the ingredients in a bowl with your fingers. If it feels too wet, add extra breadcrumbs. Roll a tablespoon-size ball in your hands and then roll them in extra breadcrumbs. Add olive oil to a fry pan and cook until white in the centre and browned on the outside. Serve with dipping sauce on the side. This full recipe makes about 24 - you can freeze the rest for future meals.
