If you like easy recipes, then keep reading for a soup recipe that is sure to become a regular on your winter soup rotation! This basic leek, potato and carrot soup recipe is handy for a weeknight dinner, as there isn't much to prepare and you can do other chores while it is simmering away. If you like to take soup to work for lunch , this recipe can also be made in advance and frozen in containers, for a healthy work lunch to fill you up during the day.

Our family tries to follow a low-salt diet as much as possible, so this recipe has no added salt, however, you can add it to your liking as it cooks. Why don't you try this budget-friendly, family-friendly recipe this weekend? It's so mild, that your kids will love it too!



Ingredients:

**1 large tablespoon margarine (Don't t replace the margarine with oil, as it changes the consistency of the soup).
1 leek, white part sliced
4 potatoes, peeled and chopped
2 carrots, peeled and sliced
3.5 cups chicken stock (we use Oxo stock cubes )

Optional decoration: pepper, swirl of cream, parsley**

What To Do:

1/ In a large saucepan, add the margarine and heat until melted.

2/ Add the leek and carrot and cook until soft.

3/ Add the potatoes and stir to coat with the margarine.

4/ Pour in the chicken stock and bring to the boil. Simmer for 30 - 40 minutes until it has reduced, stirring more near the end.

5/ Remove from heat and use a stick blender to blend until smooth.



6/ Ladle into bowls and add pepper, a swirl of cream and parsley for decoration. If you have kids, just leave it plain and serve with fingers of bread to dip into the soup.

This recipe is loved by my daughter, as a warming winter soup on a weekend. Half the fun for her is dipping the bread into the soup, but she does finish the soup itself at the end.
